To prepare the chicken wings:
Remove the wing tip from your wings, leaving a little V-joint.
Cut that in half and you have a mini drumstick and a slightly smaller piece.
Deep fry them for about 6-8 minutes, just until they’re really crispy and the juices are completely clear.
In the meantime, melt about 4oz of butter in a good sized saucepan and add in 2 tablespoonfuls of cider vinegar and 4-6 tablespoons of Tabasco sauce.
Mix it all together. When the wings are cooked, toss them in this orange coloured butter mixture and drain them.
Serve them immediately with a large dollop of blue cheese dip.
To make the blue cheese dip, mix all the following together:
Half a cup of sour cream
Three quarters cup of mayonnaise
Half a cup of crumbled blue cheese
1 clove of garlic crushed
1 teaspoon of lemon juice
1 tablespoon of cider vinegar
2 tablespoons of chopped parsley
